复合型动植物蛋白发泡剂的制备及其性能研究

摘要:纯蛋白类发泡剂有生产成本高、发泡倍数低等缺点.选用牛角粉、豆饼、NaOH、化学发泡剂、增稠剂、钙剂为主要原料,对蛋白质发泡剂配方以及水解条件进行正交试验优化,并通过与化学发泡剂的复配技术,研制出一种复合型蛋白发泡剂.研究表明,当化学发泡剂为50 g、增稠剂为5 g、钙剂为20 g、蛋白发泡剂为35 g时,得到了一种发泡倍数大于28倍,稳定时间大于45 h,泌水量小于10 mL/h的复合型蛋白发泡剂.该发泡剂具有发泡能力强、发泡倍数高、稳定性高、泡沫细腻等特点.

Abstract:The pure protein foaming agent featured with the shortcomings high production costs, low multiples of foaming.Horn powder, soybean meal, NaOH, chemical foaming agent, thickener, calcium are chosed by the main raw material;hydrolyzed protein foaming agent formulations and conditions of orthogonal experiments, and developed a complex protein foaming agent, through the compound with the chemical blowing agent technology.The results show that: when the chemical foaming agent to 50g, thickener for the 5g, calcium for the 20g, 35g protein foaming agent is obtained when a foam is greater than a multiple of 28 times, settling time is greater than 45h, secretion of water less than 10mL/h protein foam compound.This kind of foam featured with higher foaming abilities, higher foaming times, a foam ability, foam higher stability, foam delicate, etc.
